Corn Bread

Over the past year or two, i’ve built up a fascination on Korean food and culture… I think it stemmed from discovering k-pop music through the magic of youtube recommendations, This brought the likes of Simon and Martina over at Eat your Kimchi and Maangchi to my attention.

i’ve always had a passion for food, whether it was cooking (always forever asking my parents for recipes to which the answer is always ‘A bit of this and a bit of that’) or eating food. All the food. Every single type of food.

It’s something that runs in the family, every occasion or holiday is always centred around food. Food is the centre of every asian family….even more so in mine.

When watching Maangchi on youtube, I’ve always wanted to try out her recipes (I will make my own Kimchi one day!) I saw this recipe for corn bread and I thought i’d have to try it out.

Me being me, I substituted a few ingredients around to suit what I had in the kitchen such as using coconut milk, Soy Milk, or a mixture of both. The end result ended up quite well, if a bit richer and sweeter from the coconut milk. It’s still something great to have on its own with a cup of tea or with something savoury like a tomato veg stew as the savoury flavour compliments the sweetness of the corn bread.
